1 l of vegetable stock
600 g potatoes
200 g onion
100 g smoked bacon
Extra virgin olive oil Toscano PGI
Peel the potatoes and the onions and cut them into pieces.
Heat 4 spoons of olive oil in a pot, then add the potatoes and onions and brown them for 5 minutes.
Add the vegetable stock and cook the soup for 30 minutes.
Cook the bacon in a non-stick pen for 10 minutes. Serve the soup in individual bowls and garnish with some bacon.
Dress generously with Extra virgin olive oil Toscano PGI and pepper before serving.
