Quick piadine (Italian flatbread) with Toscano PGI extra virgin olive oil
for 4 piadine
400 g. all-purpose flour + some extra flour
5 g salt
20 ml extra virgin olive oil Toscano PGI
320 g of water
Put the flour in a bowl, add salt, oil and water and knead until you obtain a soft, smooth and elastic dough.
Cut the dough in four parts and make them into balls. Let them rest for at least one hour on a floured surface and cover them with a bowl.
Roll out the dough with a rolling into a disc.
Heat a non-stick pan or a cast iron pan, grease it with some extra virgin olive oil Toscano PGI and cook them over a medium heat for a few minutes on each side.
Serve them hot with whatever you like: vegetables, meat, fish and any kind of sauce.
