Here you have a quick and cheap recipe from our friend Luisanna Messeri!

Ingredients:

500g of mixed vegetables (any kind of vegetables you have in the fridge)

2 eggs

70g of breadcrumbs

25g of flour

80g of chopped prosciutto

Parsley and chives

Salt and pepper

Preparation:

Bring a pot of water to a boil. In the meanwhile dice the vegetables and when the water is boiling cook them for ten minutes. When they are cooked, drain them and blend them with an electric blender adding a pinch of salt and pepper. The meatballs will be placed on top of this sauce.

Separate the yolks from the egg whites and beat the egg whites until stiff. Then add to the beaten egg whites the breadcrumbs, the flour, the two egg yolks, the chopped prosciutto and the parsley and chives. Add some salt and pepper if needed.

Blend the mixture with your hands and make meatballs of the size of a hazelnut, then coat them in flour and deep fry them.

Smear the vegetable sauce on a plate and place the meatballs on top of the sauce, then dress with abundant olive oil.
