500 g of potatoes
120 g smoked salmon
1 red onion
Extra virgin olive oil Toscano PGI
Wash the potatoes carefully and cook them in abundant water.
Once they are ready, let them cool down, then peel them and slice them.
Peel the onion and cut it in thin slices.
Put the sliced potatoes in a bowl, add the onion, the smoked salmon cut in thin stripes, a pinch of salt, some chopped parsley and dress with extra virgin olive oil Toscano PGI.
Mix it well and let it rest for 30 minutes in order for all the flavors to blend well.
