Pasta with cherry tomatoes and stracciatella

You can prepare this pasta with cherry tomatoes and stracciatella in a few minutes. You just need to prepare a sauce with red and yellow cherry tomatoes, olive oil, garlic, salt and basil.

Before serving you will add the stracciatella that will enhance all the flavors.
You can also serve it cold in the summer. What makes this dish unique is the extra virgin olive oil Toscano PGI, both used to prepare the sauce and for dressing the stracciatella before serving.

160 g of pasta
200 g cherry tomatoes (red and yellow)
1 clove of garlic
5-6 basil leaves
Extra virgin olive oil Toscano PGI
150 g of stracciatella


Wash the tomatoes and cut them in half. Pour some oil in a pan, and brown the garlic, then add the tomatoes, a pinch of salt and the basil leaves. Cook the tomatoes, then remove the garlic.

Cook the pasta, drain it and put it directly in the pan. Mix the pasta with the sauce and plate it. Put the stracciatella and some basil leaves on top of the pasta and dress with extra virgin olive oil Toscano PGI, right before serving.
