Burrata mousse

Ingredients

400 g burrata
200 g cherry tomatoes
Extra virgin olive oil Toscano PGI
Salt
Pepper
Basil

Preparation

Dress the cherry tomatoes with abundant olive oil and some fresh basil leaves.
With an immersion blender, blend the burrata with a pinch of salt and pepper, and 4 spoons of extra virgin olive oil Toscano PGI, until you obtain a creamy texture.
Alternate layers of burrata mousse and tomatoes in small glass cups, one for each guest. Dress with pepper and extra virgin olive oil Toscano PGI.
